More bread

Maybe I should just make this a bread-baking blog if I keep this up.

Anyway, bread is expensive here.  I’m lucky to find it for $3.75/loaf on sale.   A little less at Costco if I buy 2.  Since it’s cool lately, especially in the evening, and since I can usually turn out a pretty edible loaf, I’ve  decided I will make my own.  pc060260_1024

Last night I decided to make this Oatmeal Toasting and Sandwich Bread from the King Arthur Flour website (just please don’t tell them I didn’t use their flour).  The recipe is here. My challah recipe is from there too.

I’ve made oatmeal bread before. My favorite is one that has whole wheat flour, but I didn’t have any whole wheat.  I thought an oatmeal bread would be good because it adds some extra whole grain. Healthy, right?  And because I could use one of those little plastic bags of oatmeal I seem to be collecting.  I tend to buy it when I’m at the health food store because I can never remember if I have any at home. 

When I’ve made oatmeal bread before the oatmeal was soaked in the warm milk before adding to the dough.  This time I didn’t, so you can see the oatmeal right in there.

I had my doubts about the recipe instructions to just add all ingredients at once.  I debated adding the yeast to the warm milk first, then adding the rest, like a typical bread method.  But I decided to just follow instructions.  I used unbleached flour, and honey. I used my beloved KitchenAid stand mixer, and just dumped everything in, used the paddle attachment to mix everything together.  Then I switched to the bread hook attachment.  I let it go a few minutes and then decided that it was a tad sticky so I had to add a bit more flour.  

It met my expectations.  I sliced off the heel in a teeny slice while warm–ate it with butter.  Then I went back for another teeny slice–ate it with peanut butter.   But would it fulfill its destiny as toast?  I summoned my most steely willpower and left that for this morning.  Actually, I like it better than my whole wheat version.  It has a very slight sweetness and the oatmeal isn’t overpowered by the taste of the whole wheat.
